Cooking With Denay Reedy Creek Micro Course: How to operate a successful home-based bakery
Helping bakers turn their culinary skills into profits
Cary, North Carolina (PRWEB) April 2, 2008 – Are you a pretty good baker? Have you ever wanted to operate your own bakery?
This summer cooking instructor Detra Denay Davis, owner and operator of Cooking with Denay will teach a class titled “Starting a Micro-Business: How to Start a Home-Based Bakery.” Students will learn how to operate a successful home-based bakery. The class curriculum will cover: The North Carolina Department of Agriculture and Consumer Services compliance regulation, recipe development, projecting quantities of ingredients and food/labor/overhead costs; purchasing/shopping strategies; a discussion on how a professional baker sees/approaches his/her laboratory; equipment, logistics, knife safety and storage/food safety and sanitation practicum; the practical benefits of sustainability and marketing strategies. For the final class students will produce a banquet of baked goods for 25 potential business customers. Total food cost will be shared by students.
Truly no stranger to the culinary field, Denay has been a cook, food stylist, and caterer, pastry assistant, cooking instructor and all round food enthusiast for more than thirty years. “I remember sending off for a free cookbook using the label off a Campbell soup can at the ripe old age of ten.
